Mango Soup Monday.

Last week I bought some mangoes for a recipe I've been wanting to try... HRG shared her brother's recipe! Today the mangoes were finally ripe so I worked on this in the morning before work. It was surprisingly easy and quick to make!

First you need some ripe mangoes. The recipe I shared calls for four but I used 3. 
Skin them and then blend 'em up (on purée).
There will still be some fiber and lumps so you have to strain it. This part can take awhile (but it's really not too long - it's just the longest part).
Stir in some orange juice, lime, sugar, and a sprinkle of salt.
Refrigerate for about 2 hours and it will be perfect! It's great for a snack or after-dinner refresher!
